Plants gathered for flavor, aroma, or medicinal value (2Kgs 4:39). Used at Passover, they were a symbol of suffering (Exod 12:8; Num 9:11), but they could make a modest meal (Prov 15:17).

Exod 12:8

8They shall eat the lamb that same night; they shall eat it roasted over the fire with unleavened bread and bitter herbs.

Num 9:11

11In the second month on the fourteenth day, at twilight, they shall keep it; they shall eat it with unleavened bread and bitter herbs.

Prov 15:17

17Better is a dinner of vegetables where love is
than a fatted ox and hatred with it.
